What does Salazon mean?
Salazon is Spanish for salted and Salazon Chocolate Co. is the first salted-chocolate based brand. We chose Spanish to pay homage to the Spanish speaking regions that have played such a pivotal role in the cultivation and development of cacao and chocolate.
Why do you combine chocolate and salt?
Salt, when used in moderation, is excellent at enhancing the food it is paired with. This is no different with dark chocolate, one of the most complex and delicious foods known to man. We add a touch of sea salt to bring out our organic chocolate’s nuanced flavors while balancing the sweetness of the sugar and the bitterness of the cocoa.
Where was that photo taken, and what are they doing?
Although we will be changing out the photos on our labels in the future, our original iconic photo is of a salt farm in Southeast Asia. We do not source our salt from there, the photo was chosen simply because it is a stunningly beautiful photo that involves salt.
Why don’t your bars have scores to make it easier to break the chocolate apart?
Conventional thinking is that form must follow function, but nobody has ever accused Salazon of being conventional! So, we chose to have function follow form. Our bars might be hard to break apart, but nobody else’s bars are as pretty!
Why are some of the additional ingredients sprinkled on the bar, instead of mixed in?
Again, we chose not to follow convention. Most chocolate companies mix their additional ingredients into the chocolate when it is melted, and we tried that as well. However, although it was easier - it wasn’t better. The salt, in particular, when mixed into the chocolate just didn’t give us the texture or taste we were looking for.
Why don’t you make milk chocolate?
At Salazon we see chocolate as an energy food not candy, so we simply stay away from offering sweeter, more candy-like milk chocolate. However, we do understand that some people may want a touch more sweetness so we created our Organic Dark Chocolate with Sea Salt and Organic Turbinado Sugar bar.
What is the percentage of cocoa in your bars?
57%. We’ve found that the higher cocoa content dark chocolates simply do not work well with salt. There needs to be some sweetness to counter balance the salt, or you end up with a bitter, salty chocolate that no one can stomach. Compare our nutritional content to other dark chocolate bars, and then let your taste buds guide you!
Where are the cacao beans from?
Our single-origin chocolate is made exclusively with organic Hispaniola beans from The Dominican Republic. These premium beans have been fermented and sun-dried.

Are your bars Fair Trade Certified?
Salazon Chocolate Co.’s products are made from organic cacao beans that are farmed using sustainable and environmentally sensitive methods, and where the farmers are paid and treated fairly (most own their own plots and are part of a farmer supported co-op). We’ve chosen to certify our products through Rainforest Alliance. Rainforest Alliance certification is built on the three pillars of sustainability -- environmental protection, social equity and economic viability. No single pillar can support long-term success on its own, so they help farmers succeed in all three areas!
